Schiopetto Pinot Grigio is widely considered a benchmark, world-class expression of the grape, produced by the historic Azienda Agricola Mario Schiopetto in the Collio DOC of Friuli-Venezia Giulia, northeastern Italy. Founded by Mario Schiopetto—often credited as the founding father of modern Italian white winemaking—the estate famously subverts the mass-produced, neutral stereotype of Pinot Grigio, crafting a version with immense depth, structural power, and ageability.
The winery achieves this depth through low-yielding hillside vineyards planted in ponca (a unique local soil composed of layered marl and sandstone), combined with an 8-month maturation on fine lees in stainless steel tanks.
